Even if you won in the end the lawyer bills could destroy you financially. Why take the risk?

As far as the security guards. They were under direct orders not to get involved, only report. If they did, then the good Samaritan laws that you quoted would not apply to them. They would definitely get sued, or rather the company would.

Attacker strikes an observer, observer has 100% right to self defense and, RIGHT to KILL the attacker if need be, its called Justifiable Homocide. They are probably all ghetto kids who met on some occasion. Most likely, the kid who got beaten up and her friend learned a valuable lesson: study hard, get a decent career, then grow old and raise your kids in a decent neighborhood. The attacking kids probably went away thinking they are tough and superior and will never make any effort to become better people. Most likely, they will waste away their youth increasing their rap sheets, using drugs, playing basketball at the community court, listening to rap, then die young in jail, or in some stupid gang spat, drug-related squabble or running away from the police.

It’s Darwinism in the urban scape. Just let nature go on with its course.
